Tofu marinara
This dish was quite great and will probably be hard to repeat.
For the side I just cooked up some wheat pasta in some marinara sauce. Then for the tofu part:
First fry up one chopped white onion and one package of baby bella mushrooms. They were then set aside.
Then one block of firm tofu was sliced in to 5 1-inch slabs. 1/4 cup of bread crumbs was mixed with a packet of Italian seasoning (which Anya got me as a gift). The tofu slabs were then coated in the bread crumbg-seasoning mixture. They were then fried in the olive oil that was leftover from the mushrooms. After the tofu was fried on one slide it was flipped over and when on the other side the mushrooms were then poured over the top of the tofu, and then marinara was placed on top of that, and lastly with some daiya mozzarella. This was then covered with the lid of the pan and cooked for another 5 miuntes.
Hopefully I can find some good Italian seasoning as before so I can make it again sometime.
